Today we celebrated our productive rainy day with a little (vegan) hot cocoa party. I stumbled across this web site, with some yummy ideas, and I modified her recipe to be vegan and lower-fat like this:

Hot Chocolate

1/3 cup unsweetened, non-dairy cocoa powder (low fat)
1/2 cup sucanat (vegan, natural sugar)
1/8 teaspoon sea-salt
1/2 cup boiling water
3 1/2 cups rice milk
1 teaspoon vanilla

Combine the cocoa, sugar and salt in a saucepan over medium heat. Whisk in boiling water and bring mixture to a boil, stirring continuously. Stir in the milk and heat until hot, but do not boil. Remove from heat and add vanilla. Serves 4-5.

We topped it off with a little soy whipped cream which I happen to have left over from a end-of-summer ice-cream social. A little air-popped popcorn, with a dash of sea salt, and another chapter read aloud from Red Sails to Capri, and you have the makings of a beautiful afternoon! I highly recommend it. 🙂
