Had some requests for these recipes today:

Chocolate Chip Cookies:

1 c. raw cashews (or walnuts)
1 c. water
1/2 c. dates
1/2 tsp salt
2 tsp vanilla
1 1/4 cups whole wheat pastry flour
1 c. chocolate chips

Blend the cashews, dates, water and vanilla in the blender. Pour into a bowl and add flour, salt and chocolate chips. Drop by spoonfuls onto cookie sheet (either non-stick, or lightly sprayed). Bake at 350 for @18-25 minutes (depends how big you make them).

These do not flatten and change shape like old-fashioned ones do, so they are not beautiful perfect circles. But they are AMAZINGLY delicious!

Brownies (variation From McDougall)

1 c. unbleached flour
2/3 c. reduced fat cocoa powder (mine is dairy free)
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/4 cups chopped nuts (optional- I don’t put them in)

1 c. applesauce
1 c. organic cane sugar
1 tsp vanilla
1 tbs egg replacer mixed in 1/2 c. warm water

Preheat oven to 350.
Combine dry ingredients in bowl and set aside.
Mix applesauce and sugar together in separate bowl. Stir in vanilla.
Mix egg replacer and water until frothy. Add to sugar mixture and stir to combine. Mix with wet ingredients and stir until mixed (do NOT overmix).
Spoon into a non-stick 8 inch baking dish, and flatten.
Bake for 30 minutes.
