I have gone on and on in the past about the Healthy Snacks to Go e-book I’ve been using for quite a while now. Last week I came up with a new hit, inspired by her “popeye bars” recipe. I liked the look of this recipe because it is very high in protein, and has good molasses in it for iron.

What do you think?!

Whenever we buy bars, which is not very often since I got that cookbook, the kids always want the ultra special chocolate covered ones. So I decided to make mine ultra special, too. 🙂

I made mine with only 2 cups almonds, (because I can’t do walnuts), left out the nutmeg, and I added a super thin layer of melted chocolate (allergy free chocolate chips)  to the top before they cooled. The whole pan was gone in a day, and I had to make another batch for the freezer- I’d say they were a big success!

This is only one of many hugely successful and healthful recipes I have made from this e-cookbook. I have never bought a cookbook before, and immediately made my  money back in frugal and healthful alternatives. Until this one!
